Frittata with Leeks, Herbs and Parmesan

This Frittata is very easy to prepare and while the eggs are slowly cooking you have time to assemble a refreshing salad to go with it. The leeks, herbs and Parmesan cheese give this dish delicious deep flavors and a wonderful consistency without any cream or milk.

When planning my weekly menu, I like to make sure the overall picture is balanced, healthy, includes all the essential food groups, at least two meatless days etc… Then comes Wednesday: The kids have a short day at school (that french school system!) and long after-school activities that don't allow me to spend much time in the kitchen finalizing dinner. I have to think about a recipe that can be easy, fast and fabulous. Wednesday is usually “egg day”; egg based meals answer to that "simple" list of requirements.

Frittata with herbs, leeks and Parmesan

Serves 4

Ingredients
2 tablespoon unsalted butter
4 cups (375 g) thinly sliced leeks, white and pale green parts
Salt
Freshly ground black pepper
6 eggs
¼ cup (10 g) minced fresh parsley
¼ cup (10 g) minced fresh mint
¼ cup (30 g) grated Parmesan cheese

Directions
Prep and scale all the ingredients.
You will need one 10 inch (25 cm) oven save frying pan and a medium bowl. 

Over medium heat melt the butter in the frying pan. Add the leeks and season with salt and pepper. Let the leek cook until it softens, without browning around 15 minutes.

Meanwhile, in a medium bowl, whisk the eggs until homogeneous. Add the minced herbs and Parmesan. Season with salt and black pepper. Whisk until well combined.
When the leeks are tender and ready, pour the egg and herb mixture in the frying pan. With a wooden spoon make sure the stir lightly and evenly distribute the leeks. Reduce the heat to low. Without stirring, let the egg mixture slowly cook until it sets around the edges but still moist in the middle; between 15 and 18 minutes.
While the eggs are slowly cooking, put the oven broiler on high.

When the egg mixture is ready, broil the frittata for a few minutes until the center of the frittata is set and the color golden. This is a fast step, it takes around one to two minutes, so be careful and check on the frittata often. It can burn very easily,... Be attentive and don't ruin your meal! :))

Loosen the edges of the frittata, slide it on a serving plate and enjoy!!
