Tomato Salad with Blue Cheese Dressing

Summer heat calls for refreshing recipes like this Tomato Salad with Blue Cheese Dressing. The surprising flavor combination between ripe heirloom tomatoes in season and blue cheese make this salad an unexpected quick favorite.
Heirloom tomatoes are meaty with great looks and taste! I use different colors and sizes to keep the salad vibrantly joyful :)
It can make a great meal by itself (with a slice of crusty bread. I always need bread…) or as a side dish for your BBQ plans and grilling adventures.

Tomato Salad with Blue Cheese Dressing

Serves 4

Ingredients
1/4 cup Roquefort Cheese (or your favorite blue cheese)
1/4 cup mayonnaise
1/4 cup yogurt
1 teaspoon white balsamic vinegar
Sea Salt
Black Pepper
3 medium sized ripe Heirloom Tomatoes, cored and sliced
1/2 cup cherry tomatoes, halved
2 handfuls of baby arugula
1/4 cup Roquefort Cheese, crumbled

Directions
Prep all the ingredients.
You will need one small food processor fitted with the blade attachment and one shallow serving dish.

Place 1/4 cup Roquefort Cheese with mayonnaise, yogurt and white balsamic vinegar in the bowl of a small food processor. Mix until creamy. Taste and season with sea salt and some black pepper. Set aside.

In a shallow serving dish scatter half of the arugula then place the sliced heirloom tomatoes and cherry tomatoes overlapping them a little bit. Add the rest of the arugula, sprinkle with 1/4 cup of crumbled Roquefort cheese and finish with a drizzle of the creamy blue cheese dressing. You can serve the salad with a little bit of the sauce on the side so your guests can add sauce to their liking.
