Cucumber party! This Cucumber Peanut Salad is crazy easy to prepare. Thinly sliced Persian cucumbers with salty peanuts dancing around. The dressing is citrusy (lemon + lime) with a hint of toasted sesame oil and a kiss of garlic. I like to sprinkle some ground red pepper to finish the dish with 2 festive pops: one for the eyes and one for the palate… but it’s optional.

Cucumbers and Peanuts… a marvelous combination!

Serve it as a side dish. You can also make it as a meal, in a bowl with some avocado and the protein of your choice. The dressing is versatile and goes well with your one-bowl-salad-meal cravings.

Cucumber Peanut Salad

Serves 4 as a side or 1 as a meal! ;)

Salad Ingredients
14 oz (approx. 6) small cucumbers (sometimes labeled as Persian)
2 tablespoons salted peanuts, roughly chopped
A pinch of Cayenne pepper / Espelette Pepper (optional)

Dressing ingredients
3 tablespoons extra virgin olive oil
1 tablespoon lime juice*
1 tablespoon lemon juice
1/2 teaspoon toasted sesame oil
1/2 teaspoon sea salt
1/2 teaspoon granulated sugar
1/2 garlic clove, grated

Salad directions
You will need paper towels, a sharp knife or a mandoline, and a small jar with a lid.

Finely Slice 6 the cucumbers (use mandoline if you have one). Let them sit for a few minutes between paper towels (it will absorb the water / humidity).

Meanwhile prepare the salad dressing.
Mix all the dressing ingredients in a small jar. Close the lid ans shake well. Ta da! Sauce is ready!! Wait a few more minutes for the cucumbers to finish the paper-towel-spa-treatment. Put the sliced cucumbers in a serving bowl and top them with peanuts. Just before serving, drizzle a few tablespoons of the dressing on your beautiful salad. You can also add a pinch of cayenne pepper (optional).

Serve immediately.**

*you can use a second tablespoon of lemon juice if you don’t have a lime on hand.
